Featured Recipe: Carrot Cake

CARROT CAKE


Ingredients:

  • 1 cup of grated carrot
  • 3 eggs.
  • 1/2 cup of Greek yogurt.
  • 2 cups almond flour
  • 1 cup of HEALTH GARDEN BAKING SWEETENER
  • 1/4 cup of melted coconut oil.
  • 1/4 tsp. Bicarbonate.
  • Pinch of salt.
  • 2 tbsp cinnamon
Mix everything with the help of a paddle or hand mixer in a large container, once mixed, add a handful of chopped nuts.

Take to the oven at 350 F for 30 min or until a knife comes out clean.

For the topping:
Mix the yogurt with the sweetener, bathe the cake on top with this cream and decorate with the carrot and shredded lemon.
